Farm-To-Table Event Coming to Holly River State Park Restaurant

Gather round good food on August 30th at the Holly River State Park Restaurant and experience a Farm-to-Table dinner you won’t forget. The Farm-to-Table movement celebrates the local farmer and the gifts of the land by creating inspiring dishes from local produce.

Debbie Schoolcraft, Holly River Restaurant Chef puts in long hours, creating a unique dining experience for all who walk through the doors. She sat down with us and filled us in on what to expect at the Dinner and the specially crafted five-course menu you’ll have to taste to believe.

Q. How were you selected for the August 30th Farm-to-Table Dinner?

Debbie: We were approached by the Park Service to take part in the state-wide Farm-to-Table movement. It is an absolute honor to be selected to host and prepare a dinner and to be a part of this. A lot of the State Parks that were selected are much larger than we are, but we are thrilled to provide a delicious dinner for locals and visitors of the area.

Q. What can restaurant-goers expect if they attend?

Debbie: If you attend the Farm-to-Table Dinner you’ll be able to enjoy delicious farm-fresh food and breathtaking mountain views. Spots are available at our 4 p.m. seating only – 6 p.m. is sold out.

I’ll be preparing a five-course meal of:

  • Mixed baby greens with roasted pecans, peaches, feta cheese and peach vinaigrette
  • Roasted red pepper soup with seasoned croutons
  • Rubbed western-style ribs with roasted red potatoes and creamy coleslaw
  • Gingered and honey-glazed chicken with fried green beans and fresh cut corn
  • Peach blueberry pie or rhubarb pie
